    I feel bad for Eric If that’s what he has as far as Vietnamese food. The pho was saturated and needed to have the broth poured on last second. The banh xeo should be left to crisp instead of being put in a container to softened same with the egg rolls.

    Most of the food you tasted appears to be the Japanese version of typical Vietnamese food. In other words, not very authentic.

    6:25 Eric, that's rice paper you're eating before it has been added to water to become foldable. Its the same paper using in spring rolls, and other things. We usually wet it, wait, then use it to wrap up things that later become spring rolls, egg rolls, and more. I've only eaten it hard like you did when I was a kid I guess, your mouth would break it down, sounds like a bit of work.
